We've finished our first letter of the alphabet as we continue eating our way through every restaurant in Ithaca from A-Z. I think you'll find that Abbey's Real Texas BBQ does use wood to smoke their meat. That's the only way to get that great flavor (and the distinctive "smoke ring" penetrating into the meat)! Correct me if I'm misremembering, but I believe I've seen wood next to their smoker.
(As a general rule, for a backyard smoker, one soaks chunks of barbecue-worthy wood such as hickory in water, and then puts that on hot coals to produce smoke most efficiently. So perhaps Abbey's smoker works similarly.)
